Once the iron is lowered into the oil, the edges of the batter start to brown, forming the pastry. As the mold is lifted, the cookie slips off the mold, back into the hot oil. It's then flipped with tongs to allow the other side to brown and removed from the oil to cool.  When prepared as a dessert, the edges are usually dipped in frosting or covered with sugar.
